A hearty beef noodle soup that warms the soul.
Ingredients
- Beef brisket – 1 pound
- Beef broth – 6 cups
- Rice noodles – 8 ounces
- Ginger – 1 inch, sliced
- Garlic – 4 cloves, minced
- Onion – 1, chopped
- Carrots – 2, sliced
- Green onions – 2, chopped
- Soy sauce – 3 tablespoons
- Fish sauce – 1 tablespoon
- Salt – to taste
- Pepper – to taste
- Bean sprouts – for garnish
Instructions
- In a large pot, brown the beef brisket on all sides.
- Add chopped onion, garlic, ginger, and carrots to the pot.
- Pour in beef broth, soy sauce, and fish sauce.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove the beef, let it cool, then slice thinly.
- Cook rice noodles according to package instructions.
- In serving bowls, add noodles, sliced beef, and ladle the broth over.
- Garnish with green onions and bean sprouts.
Notes
- Adjust seasoning according to your taste.
- You can add chili for spice.
- Store leftovers in the fridge for up to 3 days.
