Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and pepper.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside.
  6. Add onions and garlic to the pot, sauté until softened.
  7. Add carrots and potatoes, stirring for a few minutes.
  8. Return the roast to the pot.
  9. Pour in beef broth and Worcestershire sauce.
  10. Add dried thyme.
  11. Cover and transfer to the oven.
  12. Cook for 3-4 hours, until the meat is tender.
  13. Let it rest before slicing and serving.
