Ingredients

  • 1 onion, chopped
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 2 cups beef broth
  • 2 cloves garlic, minced

  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the beef roast with salt and pepper.
  3. Sear the roast on all sides until browned.
  4. Place the chopped onion, carrots, and potatoes in the crockpot.
  5. Put the seared roast on top of the vegetables.
  6. Pour beef broth and add garlic and thyme.
  7. Cover and cook on low for 8-10 hours or high for 4-6 hours.
  8. Check for tenderness before serving.
