Description
A hearty beef shank recipe for a comforting meal.
Ingredients

- 2 beef shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 4 cups beef broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef shanks on both sides until browned.
- Remove shanks and set aside.
- Add onion, carrots, and celery to the pot; sauté until softened.
- Add garlic and cook for 1 minute.
- Pour in red wine, scraping up browned bits from the pot.
- Return beef shanks to the pot.
- Add beef broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2-3 hours.
- Remove shanks, shred meat, and return to pot.
- Serve hot.
Notes
- Serve with mashed potatoes or bread.
- Can be made a day ahead for better flavor.
- Store leftovers in the refrigerator.
