Ingredients

  • 2 beef shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sear beef shanks on both sides until browned.
  3. Remove shanks and set aside.
  4. Add onion, carrots, and celery to the pot; sauté until softened.
  5. Add garlic and cook for 1 minute.
  6. Pour in red wine, scraping up browned bits from the pot.
  7. Return beef shanks to the pot.
  8. Add beef broth, thyme, bay leaf, salt, and pepper.
  9. Bring to a boil, then reduce heat and simmer for 2-3 hours.
  10. Remove shanks, shred meat, and return to pot.
  11. Serve hot.
