Description

A hearty beef stew made in a crock pot for easy preparation.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Add the beef to the crock pot.
  3. Stir in the carrots, potatoes, onion, and garlic.
  4. Mix in the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 8 hours or on high for 4 hours.
  6. Serve hot.

Notes

  • For thicker stew, mix 2 tbsp of cornstarch with water and stir in during the last 30 minutes of cooking.
  • Feel free to add other vegetables like peas or mushrooms.
