Description
A hearty beef stew made in a crock pot for easy preparation.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet over medium heat.
- Add the beef to the crock pot.
- Stir in the carrots, potatoes, onion, and garlic.
- Mix in the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Serve hot.
Notes
- For thicker stew, mix 2 tbsp of cornstarch with water and stir in during the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or mushrooms.
