- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef cubes and brown on all sides.
- Stir in onions and garlic, cooking until softened.
- Add tomato paste, thyme, salt, and pepper. Mix well.
- Pour in beef broth and bring to a boil.
- Add carrots and potatoes.
- Reduce heat, cover, and simmer for 1.5 to 2 hours.
- Check for tenderness and adjust seasoning if necessary.
- Serve hot.
Notes
- For thicker stew, mix 2 tablespoons of flour with water and add it in the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or celery.
- This stew can be made a day in advance for better flavor.
