Ingredients

- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach, chopped
- 1 cup pasta, cooked
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until soft.
- Stir in garlic and cook for 1 minute.
- Add broth, tomatoes, basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add spinach and cooked pasta. Cook for an additional 5 minutes.
- Serve hot.

- Feel free to add your favorite vegetables.
- Store leftovers in the refrigerator for up to 3 days.
