A simple and delicious black eyed peas recipe.
Ingredients

- 1 cup black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- 1 carrot, diced
- 1 celery stalk, diced
Instructions
- Rinse the black eyed peas under cold water.
- In a pot, combine the black eyed peas and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add onion, garlic, salt, pepper, olive oil, bay leaf, carrot, and celery.
- Continue to cook for another 30 minutes or until peas are tender.
- Remove bay leaf and serve hot.
Notes
- You can soak the peas overnight for quicker cooking.
- Add smoked meat for more flavor.
- This dish pairs well with cornbread.
