Ingredients

  • 2 pounds boneless beef short ribs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the short ribs with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat.
  4. Sear the short ribs on all sides until browned, then remove them from the pot.
  5. Add onion and garlic to the pot, cooking until softened.
  6. Pour in the red wine and scrape the bottom to deglaze.
  7. Add beef broth, soy sauce, brown sugar, and thyme.
  8. Return the short ribs to the pot and bring to a simmer.
  9. Cover and transfer the pot to the oven.
  10. Bake for 2 to 2.5 hours until the meat is tender.
