Ingredients

- 2 cups of coleslaw mix
- 1 cup of mayonnaise
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of sugar
- Salt and pepper to taste
- 4 ears of corn, husked
- 1/4 cup of butter
- 1 teaspoon of paprika
Instructions
- In a bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well.
- Cover and refrigerate for at least 1 hour.
- Boil water in a large pot and add corn.
- Cook for 5-7 minutes until tender.
- Remove corn and brush with melted butter and sprinkle paprika.
- Serve coleslaw and corn together as sides.
Notes
- Adjust sugar based on your taste preference.
- You can add diced onions or carrots to the coleslaw for extra flavor.
- Grilling the corn instead of boiling can add a smoky flavor.
