- 2 cups cooked corned beef, diced
- 2 cups potatoes, peeled and diced
- 1 onion, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 eggs (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced potatoes and cook until they are golden brown and tender, about 10-15 minutes.
- Stir in the chopped onion and cook until translucent.
- Add the diced corned beef and mix well.
- Season with salt and pepper to taste.
- If using, create two wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set.
- Serve hot.
Notes
- Use leftover corned beef for best results.
- You can add bell peppers for extra flavor.
