A simple and delicious way to use your corned beef leftovers.
Ingredients

- 2 cups corned beef, shredded
- 1 cup sauerkraut
- 1 cup Swiss cheese, shredded
- 4 slices rye bread
- 4 tablespoons butter
Instructions
- Heat a skillet over medium heat.
- Butter one side of each slice of rye bread.
- Layer corned beef, sauerkraut, and Swiss cheese between two slices of bread, buttered side out.
- Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes.
- Flip the sandwich and cook the other side until golden brown and cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
- Use leftover corned beef from a previous meal.
- This recipe is great for lunch or dinner.
- Feel free to add mustard for extra flavor.
