A crisp and refreshing salad featuring seasonal vegetables.


Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. In a large bowl, combine the greens, tomatoes, cucumber, bell pepper, carrot, and red onion.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Top with feta cheese before serving.
