- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Stir in onions and garlic; cook until softened.
- Add tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Add potatoes and carrots; reduce heat to low.
- Cover and simmer for about 2 hours or until beef is tender.
- Serve hot.

- Feel free to add other vegetables like peas or green beans.
- Leftovers can be stored in the fridge for up to 3 days.
