- 1 lb chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 zucchinis, sliced
- 1 bell pepper, chopped
- 1 cup corn
- Barbecue sauce for brushing
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Coat chicken breasts with the mixture.
- Place chicken on the grill and cook for 6-7 minutes on each side.
- Add zucchini, bell pepper, and corn to the grill.
- Cook vegetables for 5-7 minutes until tender.
- Brush chicken with barbecue sauce during the last 2 minutes of grilling.
- Remove everything from the grill and let it rest for a few minutes before serving.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Feel free to add your favorite veggies.
