Ingredients

  • 2 cups quinoa, rinsed
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, bring vegetable broth to a boil.
  2. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  3. Remove from heat and let it sit for 5 minutes.
  4. Fluff quinoa with a fork.
  5. In a large bowl, combine tomatoes, cucumber, bell pepper, red onion, and parsley.
  6. Add the quinoa to the vegetable mixture.
  7. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over the quinoa salad and mix well.
  9. Chill in the refrigerator for 30 minutes before serving.
