Description
A traditional spiced sweet bun, marked with a cross on top, often served during Easter.
Ingredients
Scale
- 500g strong white flour
- 75g caster sugar
- 10g salt
- 10g instant yeast
- 250ml milk, warm
- 50g unsalted butter, melted
- 1 large egg
- 150g mixed dried fruit
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- For the cross: 75g plain flour and water
- For the glaze: 75g apricot jam
Instructions
- Mix the flour, sugar, salt, yeast, cinnamon, and nutmeg in a bowl.
- Add warm milk, melted butter, and egg. Mix to form a dough.
- Knead the dough for 10 minutes until smooth.
- Add dried fruit and knead until evenly distributed.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour.
- Punch down the dough and divide it into 12 equal pieces.
- Shape each piece into a bun and place on a lined baking tray.
- Cover and let rise for another 30 minutes.
- Preheat the oven to 220°C (428°F).
- Mix plain flour with water to make a paste for the cross and pipe it on top of the buns.
- Bake for 20 minutes until golden brown.
- Heat apricot jam and brush it over the buns for glaze.
Notes
- Store buns in an airtight container for freshness.
- These buns are best eaten warm.
- Can be made a day ahead and reheated.
