Description

A simple and delicious instant pot roast beef recipe.


Ingredients

Scale
  • 3 pounds beef roast
  • 2 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 3 potatoes, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Instructions

  1. Season the beef roast with salt, pepper, thyme, and rosemary.
  2. Set the instant pot to sauté and add olive oil.
  3. Brown the roast on all sides, about 4-5 minutes each side.
  4. Remove the roast and set aside.
  5. Add onion and garlic to the pot, sauté for 2 minutes.
  6. Pour in beef broth and scrape up any browned bits.
  7. Return the roast to the pot and add carrots and potatoes.
  8. Seal the instant pot and cook on high pressure for 60 minutes.
  9. Let the pressure release naturally for 10 minutes, then quick release the remaining pressure.
  10. Slice and serve the roast with vegetables.

  • Adjust seasoning to your taste.
  • Use chuck roast for best results.
