A simple and delicious instant pot roast beef recipe.
Ingredients

- 3 pounds beef roast
- 2 cups beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 3 potatoes, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Season the beef roast with salt, pepper, thyme, and rosemary.
- Set the instant pot to sauté and add olive oil.
- Brown the roast on all sides, about 4-5 minutes each side.
- Remove the roast and set aside.
- Add onion and garlic to the pot, sauté for 2 minutes.
- Pour in beef broth and scrape up any browned bits.
- Return the roast to the pot and add carrots and potatoes.
- Seal the instant pot and cook on high pressure for 60 minutes.
- Let the pressure release naturally for 10 minutes, then quick release the remaining pressure.
- Slice and serve the roast with vegetables.
Notes
- Adjust seasoning to your taste.
- Use chuck roast for best results.
- Store leftovers in an airtight container.
