Simple and fresh Mediterranean-inspired meals perfect for summer.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the quinoa with a fork.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, parsley, feta, and olives.
- Add the cooked quinoa to the vegetable mixture.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently to combine.
Notes
- Serve chilled or at room temperature.
- This dish can be made a day in advance.
- Feel free to add grilled chicken or shrimp for protein.
