Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the beef roast with olive oil, salt, and pepper.
  3. In a small bowl, mix garlic, rosemary, and thyme. Rub this mixture over the roast.
  4. Place the roast in a roasting pan and pour beef broth around it.
  5. Roast in the oven for 15 minutes, then lower the temperature to 325°F (163°C).
  6. Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
  7. Let the roast rest for 15 minutes before slicing.
