- 2 lbs corned beef
- 1 head of cabbage, chopped
- 4 large carrots, sliced
- 4 potatoes, quartered
- 1 onion, chopped
- 4 cups beef broth
- 1 tablespoon mustard seeds
Instructions
- Rinse the corned beef under cold water.
- Place the corned beef in a large pot and cover with beef broth.
- Add mustard seeds, onion, and bring to a boil.
- Reduce heat and simmer for 2 hours.
- Add potatoes and carrots, cooking for another 30 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Slice the corned beef and serve with vegetables.
