Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a bowl, mix black beans, corn, tomatoes, and lime juice.
  5. Once rice is cooked, fluff with a fork.
  6. Serve rice topped with the bean mixture and avocado slices.
  7. Season with salt and pepper.
