Ingredients

- 1 can of black beans
- 1 cup of corn
- 2 tomatoes, diced
- 1 avocado, sliced
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a bowl, mix black beans, corn, tomatoes, and lime juice.
- Once rice is cooked, fluff with a fork.
- Serve rice topped with the bean mixture and avocado slices.
- Season with salt and pepper.
