Ingredients

- 3 to 4 pounds corned beef brisket
- 1 onion, quartered
- 4 carrots, peeled and cut into chunks
- 4 potatoes, quartered
- 2 cups beef broth
- 2 teaspoons mustard seeds
- 1 teaspoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the onion, carrots, and potatoes around the brisket.
- Pour the beef broth over the meat and vegetables.
- Add mustard seeds, black peppercorns, and bay leaves.
- Cover and cook on low for 8 to 10 hours or until the meat is tender.
- Remove the meat and let it rest for a few minutes.
- Slice the corned beef and serve with vegetables.

- Adjust seasoning to taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
