- 1 kg new potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Wash and scrub the new potatoes.
- Boil the potatoes in salted water for 15 minutes.
- Drain the potatoes and let them cool slightly.
- In a large bowl, toss the potatoes with olive oil, salt, and pepper.
- Transfer the potatoes to a baking tray.
- Roast in a preheated oven at 200°C for 25 minutes.
- Garnish with fresh parsley before serving.
