Ingredients

  • 1 cup rice paper wrappers
  • 1 cup cooked shrimp, chopped
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, julienned
  • 1/2 cup cucumber, julienned
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup hoisin sauce

Instructions

  1. Soak the rice paper wrappers in warm water for about 10 seconds until soft.
  2. Place a wrapper on a clean surface.
  3. Layer shrimp, lettuce, carrots, cucumber, mint, and cilantro on the wrapper.
  4. Fold the sides of the wrapper over the filling.
  5. Roll the wrapper tightly from the bottom to the top.
  6. Repeat with remaining wrappers and filling.
  7. Serve with hoisin sauce for dipping.
