- 2 cups corn kernels
- 1 cup cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cream cheese, sour cream, and mayonnaise.
- Add corn, cotija cheese, cilantro, lime juice, chili powder, and salt to the mixture.
- Mix until well combined.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until bubbly and golden.
- Serve warm with tortilla chips.
Notes
- Adjust the spice level by adding more chili powder if desired.
- Garnish with extra cilantro before serving.
- This dip can be made ahead of time and baked before serving.
