A traditional Irish dish perfect for St. Patrick’s Day.
Ingredients

- 2 lbs potatoes, peeled and diced
- 1 lb cabbage, chopped
- 1 lb corned beef, cooked and sliced
- 1 cup vegetable broth
- 1 onion, chopped
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Boil potatoes in salted water until tender.
- Drain and mash with butter.
- In a separate pot, sauté onion until translucent.
- Add cabbage and vegetable broth, cooking until cabbage is tender.
- Mix mashed potatoes with cabbage and onion.
- Serve topped with sliced corned beef.

- Use leftover corned beef for quick preparation.
- Adjust seasoning to your taste.
