Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add white beans, corn, green chilies, onion, garlic, chicken broth, cumin, oregano, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
