- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 cup green beans, chopped
- 1 cup potatoes, diced
- 1 cup corn
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Stir in garlic, thyme, and bay leaf. Cook for 1 minute.
- Add vegetable broth and diced tomatoes. Bring to a boil.
- Add green beans, potatoes, and corn. Simmer for 20 minutes.
- Season with salt and pepper. Remove bay leaf before serving.
