A simple and delicious young beef recipe.
Ingredients

- 2 pounds young beef, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 2 carrots, sliced
- 2 potatoes, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add young beef and brown on all sides.
- Pour in beef broth and bring to a boil.
- Add salt, pepper, thyme, carrots, and potatoes.
- Reduce heat and simmer for 1 hour, or until meat is tender.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Serve with crusty bread.
- Store leftovers in an airtight container.
