  • 2 cups 2 cups cauliflower florets
  • 1 cup 1 cup bell peppers, sliced
  • 1 cup 1 cup carrots, sliced
  • 2 tablespoons 2 tablespoons olive oil
  • 1 teaspoon 1 teaspoon garlic powder
  • 1 teaspoon 1 teaspoon onion powder
  • to taste Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the broccoli, cauliflower, bell peppers, and carrots.
  3. Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  5. Air fry the vegetables for 10-12 minutes, shaking the basket halfway through cooking for even crisping.
  6. Once the vegetables are crispy and tender, remove them from the air fryer and serve immediately.

Notes

  • Feel free to mix and match your favorite vegetables.
  • For extra crunch, you can add a sprinkle of parmesan cheese before serving.
