A warm, comforting dessert combining tart rhubarb and sweet apples, topped with a crunchy oat topping.

- 4 cups rhubarb, chopped
- 4 cups apples, peeled and sliced (Granny Smith or Honeycrisp recommended)
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rhubarb, apples, granulated sugar, lemon juice, and cinnamon. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, combine the oats, flour, brown sugar, melted butter, and salt. Mix until crumbly.
- Spread the oat mixture evenly over the fruit mixture in the baking dish.
- Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
- Let cool for a few minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.
Notes
- Feel free to mix in other fruits like strawberries or blueberries for additional flavor.
- Store leftovers in the refrigerator for up to 3 days.
