Ingredients

- 2 lbs beef shank
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 4 cups beef broth
- 2 tbsp olive oil
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season beef shank with salt and pepper, then brown on all sides.
- Add onion, carrots, celery, and garlic; sauté until softened.
- Pour in red wine and scrape the bottom of the pot.
- Add beef broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2-3 hours until meat is tender.
- Remove beef shank, shred meat, and return to pot.
- Serve hot.
Notes
- Serve with mashed potatoes or crusty bread.
- Store leftovers in an airtight container in the fridge.
- Reheat on the stove or in the microwave.
