Instructions
- Brown the beef in a large pot over medium heat.
- Add onions and garlic, cooking until softened.
- Stir in tomato paste, thyme, and rosemary.
- Add beef broth, potatoes, and carrots.
- Bring to a boil, then reduce heat to simmer.
- Cook for 1.5 to 2 hours until beef is tender.
- Season with salt and pepper before serving.
