- 2 tablespoons olive oil

- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, combine olive oil, salt, pepper, minced garlic, rosemary, and thyme to create a herb paste.
- Rub the herb paste all over the boneless rib roast, ensuring it is evenly coated.
- Place the roast on a rack in a roasting pan. Pour beef broth into the bottom of the pan.
- Roast in the preheated oven for 20 minutes to develop a crust.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
- Slice the roast against the grain and serve with the pan juices.
