  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  6. Stir in lime zest and lime juice until evenly distributed.
  7. Divide the batter evenly among the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the frosting, beat together powdered sugar, softened butter, vanilla extract, and enough milk to achieve a spreadable consistency.
  10. Once the cakes are completely cooled, frost between the layers and around the sides and top of the cake.
  11. Decorate with colorful sprinkles and edible decorations to celebrate in style.
