This grilled lemon herb chicken paired with vibrant summer vegetables is perfect for a light and refreshing dinner idea during the warm summer months.
Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup cherry tomatoes
- Fresh basil for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over. Seal or cover and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and discard the marinade. Grill chicken for about 6-7 minutes per side, or until cooked through and juices run clear.
- In the last few minutes of grilling, add the sliced zucchini, bell pepper, and cherry tomatoes to the grill. Cook until tender and slightly charred.
- Serve the grilled chicken topped with fresh basil and alongside the grilled vegetables.
