Description

This grilled lemon herb chicken paired with vibrant summer vegetables is perfect for a light and refreshing dinner idea during the warm summer months.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes
  • Fresh basil for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over. Seal or cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade and discard the marinade. Grill chicken for about 6-7 minutes per side, or until cooked through and juices run clear.
  5. In the last few minutes of grilling, add the sliced zucchini, bell pepper, and cherry tomatoes to the grill. Cook until tender and slightly charred.
  6. Serve the grilled chicken topped with fresh basil and alongside the grilled vegetables.
