Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the sliced summer squash and onion, cooking until the squash is tender, about 5-7 minutes.
- In a large mixing bowl, combine the cooked squash mixture, shredded cheddar cheese, breadcrumbs, beaten eggs, milk, salt, black pepper, garlic powder, and Italian seasoning. Mix until well combined.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly.
