- 1 lb ground beef
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 8 corn tortillas
- 2 cups shredded lettuce
- 1 cup shredded cheese
- 1 cup salsa
- 1 avocado, diced
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the black beans, diced tomatoes, taco seasoning, and salt and pepper to the skillet. Stir to combine and let simmer for 5-7 minutes.
- While the mixture simmers, warm the corn tortillas in a separate pan over low heat until soft.
- To assemble, place a few spoonfuls of the beef and bean mixture in the center of a warm tortilla.
- Top with shredded lettuce, cheese, salsa, and diced avocado.
- Fold the tortilla over the filling and serve immediately.
