- 8 ounces of pasta (your choice)
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the cherry tomatoes and cook until they begin to soften, about 2-3 minutes.
- Add the spinach and cook until wilted, about 1-2 minutes.
- Combine the cooked pasta with the chicken and vegetables in the skillet. Toss to combine and heat through.
- Serve with grated Parmesan cheese on top and garnish with fresh basil if desired.
Notes
- Feel free to swap out the vegetables for whatever you have on hand.
- You can use pre-cooked chicken for an even quicker meal.
