- 2 pounds Boneless Chicken Thighs
- 4 ears, husked and cut in half Corn on the Cob
- 1, diced Red Bell Pepper
- 1, chopped Onion
- 4 cloves, minced Garlic
- 2 tablespoons Olive Oil
- 1 tablespoon Italian Seasoning
- to taste Salt
- to taste Black Pepper
- 1 cup Chicken Broth
Instructions
- In a large bowl, mix together the olive oil, garlic, Italian seasoning, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them well with the mixture.
- Place the coated chicken in the crockpot.
- Add the chopped onion, diced red bell pepper, and corn on the cob on top of the chicken.
- Pour the chicken broth over the top.
