- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Balsamic vinaigrette, for drizzling
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper.
- Add the chicken breasts to the marinade and coat well. Let it marinate for at least 15 minutes.
- Place the marinated chicken on the grill and cook for 6-7 minutes on each side or until fully cooked.
- Remove chicken from the grill and let it rest for a few minutes before slicing.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Top the salad with sliced grilled chicken and drizzle with balsamic vinaigrette.
