Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan, combine rhubarb, sugar, and water. Bring to a boil and simmer for 10 minutes until the rhubarb is tender.
  3. In a large bowl, mix flour, oats, baking powder, and salt.
  4. Add the softened butter and vanilla extract to the flour mixture, and mix until crumbly.
  5. Spread half of the crumb mixture into the bottom of a greased 9×13 inch baking dish.
  6. Pour the rhubarb mixture over the crumb layer.
  7. Sprinkle the remaining crumb mixture on top of the rhubarb.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  9. Allow to cool before serving.

Notes

  • Serve warm or at room temperature.
  • Great with a scoop of vanilla ice cream on top.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
