- 2 cups rhubarb, chopped
- 1 cup sugar
- 2 cups all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium saucepan, combine rhubarb, sugar, and water. Bring to a boil and simmer for 10 minutes until the rhubarb is tender.
- In a large bowl, mix flour, oats, baking powder, and salt.
- Add the softened butter and vanilla extract to the flour mixture, and mix until crumbly.
- Spread half of the crumb mixture into the bottom of a greased 9×13 inch baking dish.
- Pour the rhubarb mixture over the crumb layer.
- Sprinkle the remaining crumb mixture on top of the rhubarb.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Allow to cool before serving.
Notes
- Serve warm or at room temperature.
- Great with a scoop of vanilla ice cream on top.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
