- 4 boneless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine cherry tomatoes, cucumber, red onion, olive oil, balsamic vinegar, salt, and pepper. Stir well and set aside.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes.
- Slice the chicken and serve it topped with the tomato-cucumber mixture.
- Garnish with fresh basil before serving.
