Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cherry tomatoes, halved
  • 1 cup corn, frozen or fresh
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat.
  2. Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the cherry tomatoes and corn to the skillet, cooking until the tomatoes soften, about 2-3 minutes.
  4. Remove from heat and stir in diced avocado, red onion, cilantro, and lime juice.
  5. Warm the tortillas in a separate pan or microwave.
  6. To assemble, spoon the chicken mixture onto each tortilla, top with shredded cheese, and roll up.
  7. Serve immediately or wrap in foil for an on-the-go meal.

  • Feel free to customize with your favorite vegetables.
  • These wraps can be made ahead of time and stored in the fridge for up to 2 days.
