- 1 lb chicken breast, diced
- 2 cups cherry tomatoes, halved
- 1 cup corn, frozen or fresh
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- 4 whole wheat tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- In a large skillet, heat a tablespoon of olive oil over medium heat.
- Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add the cherry tomatoes and corn to the skillet, cooking until the tomatoes soften, about 2-3 minutes.
- Remove from heat and stir in diced avocado, red onion, cilantro, and lime juice.
- Warm the tortillas in a separate pan or microwave.
- To assemble, spoon the chicken mixture onto each tortilla, top with shredded cheese, and roll up.
- Serve immediately or wrap in foil for an on-the-go meal.
