- 4 cups yellow squash, sliced
- 1 small onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup crushed crackers (like Ritz)
- 1/2 cup melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the yellow squash and onion over medium heat until the squash is tender, about 5-7 minutes.
- In a mixing bowl, combine the cooked squash and onion with cheddar cheese, sour cream, melted butter, salt, pepper, and garlic powder. Mix well.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top the casserole with crushed crackers and sprinkle with a little extra melted butter if desired.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
