Description

This delicious overnight egg and bread casserole is perfect for brunch or a cozy breakfast. Just prepare it the night before, let it sit in the fridge, and bake it in the morning for a warm, comforting meal.

Ingredients

Scale
  • 1 loaf of bread (French or Italian), cubed
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled bacon or sausage (optional)
  • 1/4 cup chopped green onions or chives
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon mustard (optional)
  • Butter or non-stick spray for greasing the baking dish

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and mustard (if using).
  3. Add the cubed bread to the egg mixture, stirring gently to combine. Let it sit for about 10 minutes to allow the bread to absorb the liquid.
  4. Add in the shredded cheese, cooked bacon or sausage, and chopped green onions. Mix well.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Cover the dish with plastic wrap and refrigerate overnight.
  7. In the morning, preheat your oven to 350°F (175°C).
  8. Remove the plastic wrap from the baking dish and bake for 45-55 minutes, or until the casserole is set and golden brown on top.
  9. Let it cool for a few minutes before serving. Enjoy your delicious egg and bread casserole!
