- 1 cup low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 packet taco seasoning (low-sodium if desired)
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup corn (fresh or frozen)
- Salt and pepper to taste
- Whole grain tortillas for serving
- Toppings: diced avocado, cilantro, lime wedges, salsa
Instructions
- Place the chicken breasts in the crockpot.
- Add chicken broth, diced tomatoes, taco seasoning, bell pepper, onion, and corn.
- Stir to combine, ensuring chicken is coated with the seasoning.
- Cover and cook on low for 6 hours or high for 3 hours.
- Once cooked, shred the chicken with two forks and mix well with the sauce.
- Season with salt and pepper to taste.
- Serve in whole grain tortillas and top with avocado, cilantro, lime, and salsa.
