Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, sliced
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade.
  4. Place the marinated chicken breasts on a baking sheet lined with parchment paper.
  5. Surround the chicken with cherry tomatoes and lemon slices.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. In the last 5 minutes of baking, add the fresh spinach on top of the chicken and return to the oven.
  8. Once done, remove from the oven and sprinkle crumbled feta cheese over the chicken.
  9. Garnish with fresh herbs if desired, and serve warm.

Notes

  • You can substitute chicken breasts with chicken thighs for a juicier option.
  • Feel free to add other vegetables like bell peppers or zucchini.
