- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup feta cheese, crumbled
- 1 lemon, sliced
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade.
- Place the marinated chicken breasts on a baking sheet lined with parchment paper.
- Surround the chicken with cherry tomatoes and lemon slices.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- In the last 5 minutes of baking, add the fresh spinach on top of the chicken and return to the oven.
- Once done, remove from the oven and sprinkle crumbled feta cheese over the chicken.
- Garnish with fresh herbs if desired, and serve warm.
Notes
- You can substitute chicken breasts with chicken thighs for a juicier option.
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish pairs well with rice or a fresh salad.
