- 4 salmon fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup fresh spinach
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Season the salmon fillets with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the salmon fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Add the spinach, sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Stir until the spinach wilts and the sauce thickens slightly.
- Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Garnish with fresh basil before serving.
Notes
- Feel free to substitute the salmon with chicken or shrimp if preferred.
- For a lighter version, you can use half-and-half instead of heavy cream.
