Ingredients

  • 4 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup fresh spinach
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Season the salmon fillets with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the salmon fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
  6. Add the spinach, sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Stir until the spinach wilts and the sauce thickens slightly.
  7. Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with fresh basil before serving.

Notes

  • Feel free to substitute the salmon with chicken or shrimp if preferred.
  • For a lighter version, you can use half-and-half instead of heavy cream.
